Is there a improved way to repurpose leftover rotisserie hen than this? Mini snack-dimension quesadillas with a salsa-chicken-filling cooked right until melted, golden brown tacky goodness?
The remedy is no. Just no.
They are best to feed significant crowds as a snack (hi, Sport Day necessities in this article) or even a light lunch for the spouse and children.
I like to provide mine with a dollop of guacamole, pico de gallo and sour product but you can use any or all of them. They’re also excellent on their very own. At times the toppings just get in your way anyway.

Mini Rooster Quesadillas

Mini Rooster Quesadillas

- 1 1/2 cups leftover finely shredded rotisserie rooster
- 1 1/2 cups shredded Mexican blend cheese
- 1/3 cup cafe-fashion salsa
- 1/4 cup chopped fresh cilantro leaves
- Kosher salt and freshly floor black pepper, to style

- 3 tablespoons canola oil, divided
For serving
- 1 cup guacamole
- 1 cup pico de gallo
